Ingredients
1 lg onion, diced
1 red/green bell pepper, diced
2 garlic cloves, minced
4 cups sweet potatoes, chopped
2 teaspoons each of cumin, chili powder, paprika
S & P
4 cups water (or broth)
28-oz diced tomatoes
14-oz black beans, drained and rinsed well
14-oz kidney beans, drained and rinsed well
14-oz cannelini beans, drained and rinsed well
NOTE I typically use dry beans which I soak overnight & cook in the pressure cooker**
Preparation
Use saute mode on pressure cooker to saute onion, pepper, and garlic.
Add sweet potatoes, spices, S&P and stir.
Add water/broth, beans, and diced tomatoes.
Cancel Saute mode.
Close and Lock lid and turn on Soup setting for 15 minutes.
Let pressure release naturally and CAREFULLY remove lid and serve.
Top with favorite chili toppings. Enjoy!
