Creamy Tahini Chicken Salad

Ingredients

For the Salad:

  • 2 boneless, skinless chicken breasts

  • 4 cups mixed salad greens (e.g., spinach, arugula, romaine)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, sliced

  • 1/2 red onion, diced

  • 1/4 cup sliced almonds (or nuts of your choice)

For the Creamy Tahini Dressing:

  • 3 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon Dijon mustard

  • 1 tablespoon tahini

  • Salt and pepper to taste

Preparation

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper and bake for about 25-30 minutes or until cooked through. Allow to cool slightly, then slice them into thin strips.

  2. In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.

  3. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, tahini, salt, and pepper to create the creamy tahini dressing.

  4. Add sliced chicken to salad bowl.

  5. Drizzle creamy tahini dressing over the salad and toss everything together until well combined.

  6. Sprinkle sliced almonds (or your choice of nuts) on top of the salad.

  7. Serve immediately!
