Ingredients
1 onion, chopped
8 garlic cloves (because why not), minced
48 ounces diced tomatoes
2 Tablespoons Italian Seasoning
Salt & pepper, to taste
2 Tablespoons avocado oil
1/2 cup red lentils, rinsed
1/2 cup broth/water
1 container mushrooms, chopped
Preparation
In a large skillet, warm the avocado oil.
Add onion and cook until translucent. Add garlic and cook until fragrant.
Add tomatoes, Italian Seasoning, salt, & pepper. Stir.
Add lentils, mushrooms, and broth. Bring to a boil.
Reduce to a simmer and cook until lentils are tender (about 20 minutes).
Serve over pasta.
