Lentil Bolognese

Prep Time:

40 minutes

Ingredients

  • 1 onion, chopped

  • 8 garlic cloves (because why not), minced

  • 48 ounces diced tomatoes

  • 2 Tablespoons Italian Seasoning

  • Salt & pepper, to taste

  • 2 Tablespoons avocado oil

  • 1/2 cup red lentils, rinsed

  • 1/2 cup broth/water

  • 1 container mushrooms, chopped

Preparation

  1. In a large skillet, warm the avocado oil.

  2. Add onion and cook until translucent. Add garlic and cook until fragrant.

  3. Add tomatoes, Italian Seasoning, salt, & pepper. Stir.

  4. Add lentils, mushrooms, and broth. Bring to a boil.

  5. Reduce to a simmer and cook until lentils are tender (about 20 minutes).

  6. Serve over pasta.

  7. Enjoy!
