Ingredients
1 cup green/brown lentils, cooked
2 large carrots, chopped
3 ribs celery, chopped
mushrooms, washed and chopped
onion, diced
tomato sauce (I used leftover tomato soup)
S & P to taste
1 teaspoon each of cumin, paprika
Cooked mashed potatoes
Preparation
Combine lentils, veggies, and tomato sauce in a deep baking dish.
Add spices and stir to incorporate.
Top with mashed potatoes.
Bake at 350 for 20-25 minutes or until it's golden.
