Mujadara

Prep Time:

40 minutes

Ingredients

  • 1 cup brown/green lentils

  • 1 onion, thinly sliced

  • 4 cloves garlic, minced

  • 2 teaspoons cumin

  • 1 teaspoon each of allspice and salt

  • 1/2 teaspoon each of cinnamon and turmeric

  • 1 Tablespoon fresh parsley

  • 3 cups water

  • 1 cup brown rice (soaked & rinsed)

Preparation

  1. Saute onions with water until caramelized.

  2. Remove 1/2 to use as topping.

  3. Add garlic and cook until fragrant.

  4. Add spices and water and stir.

  5. Add lentils and rice and mix well.

  6. Cover, lock lid, close release valve and cook for 20 minutes. Let pressure release.

  7. Meanwhile, prepare a salad.

  8. Open lid CAREFULLY and fluff mujadara with a fork (being careful not to over mix).

  9. Serve with parsley and the rest of the caramelized onions.
