Quinoa Spaghetti with Bean Balls

Ingredients

  • 1 package Trader Joe's Quinoa & Rice Spaghetti (not sponsored)

  • 1 package Trader Joe's Melodious Blend (also not sponsored)

  • 1 large onion, chopped

  • garlic, chopped

  • 1 egg, beaten

  • S & P

  • Parsley & oregano

  • preferred marinara sauce (homemade would be great)

Preparation

  1. Cook spaghetti and set aside.

  2. FOR BEAN BALLS:

  3. Preheat oven to 350 and line a baking sheet.

  4. In a food processor, add the package of Melodious Blend (heated).

  5. Add onion, garlic, parsley, oregano, egg. salt, and pepper. Process until smooth.

  6. Using a rounded Tablespoon, portion out the bean mixture and form "meatballs" by rolling in your hands.

  7. Place the bean balls on the baking sheet and bake 15-20 minutes.

  8. In a saucepan, heat your preferred marinara sauce until simmering.

  9. Add bean balls and stir to coat.

  10. Serve over spaghetti. Enjoy!
