Ultra Moist Banana Bread

Ingredients

  • 2 to 3 ripe bananas, mashed

  • 1/3 cup unsweetened applesauce

  • 1 teaspoon baking soda

  • A pinch of salt

  • 1/2 cup honey or maple syrup (as a natural sweetener)

  • 1 large egg or a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)

  • 1 teaspoon vanilla extract

  • 1 1/2 cups almond flour (or oat flour)

  • 1/2 cup chopped nuts (e.g., walnuts or almonds) for added healthy fats and texture

  • 1/2 teaspoon ground cinnamon (optional, for flavor)

Preparation

  1. Preheat oven to 350°F (175°C). Grease a 4x8 inch (or similar size) loaf pan with a small amount of coconut oil or use parchment paper for a non-stick option.

  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.

  3. Stir in unsweetened applesauce, baking soda, and a pinch of salt.

  4. Add honey or maple syrup, egg (or flax egg), and vanilla extract. Mix well.

  5. Gradually fold in the almond flour (or oat flour) until batter is well combined.

  6. If you'd like, add the chopped nuts and ground cinnamon for extra flavor and texture. Mix until evenly distributed.

  7. Pour batter into greased loaf pan.

  8. Bake in preheated oven for about 45-55 minutes or until a toothpick inserted into the center comes out clean.

  9. Remove banana bread from oven and let it cool in the pan for 10-15 minutes. Then, transfer it to a wire rack to cool completely.

  10. Slice and serve!
