Green Sauce

Ingredients

  • 1 cup packed kale leaves, stems removed

  • 1 cup fresh parsley leaves

  • ½ cup fresh cilantro leaves

  • ¼ cup flaxmeal

  • ½ cup walnuts

  • ¼ cup extra virgin olive oil

  • Salt and pepper to taste

  • Water, as needed for desired consistency

Preparation

  1. Prepare the Ingredients: Wash the kale, parsley, and cilantro thoroughly. Remove any tough stems from the kale and roughly chop the leaves. Measure out the flaxmeal, toasted walnuts, and olive oil.

  2. Blend the Greens: In a food processor or blender, combine the kale, parsley, cilantro, flaxmeal, and toasted walnuts. Pulse a few times to begin breaking down the ingredients.

  3. Add Olive Oil: With the food processor running, slowly drizzle in the olive oil. Continue blending until the mixture starts to come together into a thick paste.

  4. Adjust Consistency: If the sauce is too thick, add water, a tablespoon at a time, until you reach your desired consistency. Blend again until smooth.

  5. Season to Taste: Taste the sauce and season with salt and pepper according to your preference. Blend briefly to incorporate the seasoning.

  6. Serve or Store: Transfer the green sauce to a jar or airtight container. Use it immediately as a condiment or store it in the refrigerator for up to one week.

  7. Enjoy: Drizzle this nutrient-packed green sauce over grilled chicken, roasted vegetables, pasta, or use it as a dip for crudites. Get creative and add a burst of freshness and flavor to your favorite dishes!
