Chickpea Flour Pancakes with Apple Sauce

Ingredients

For the Chickpea Flour Pancakes:

  • 1 cup chickpea flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 3/4 cup milk (of your choice)

  • 1/4 cup unsweetened applesauce

  • 1 tablespoon maple syrup or honey

  • 1 tablespoon melted butter or coconut oil

  • 1 teaspoon vanilla extract



Preparation

  • In a mixing bowl, combine the chickpea flour, baking powder, cinnamon, and salt. Whisk until well combined.

  • In a separate bowl, whisk together the milk, unsweetened applesauce, maple syrup or honey, melted butter or coconut oil, and vanilla extract.

  • Gradually pour the wet ingredients into the dry ingredients, whisking until a smooth batter forms. Let the batter rest for 5-10 minutes to thicken.

  • Heat a lightly greased skillet or griddle over medium heat.

  • Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.

  • Repeat with the remaining batter, adding more oil to the skillet as needed.
