Ingredients
For the Chickpea Flour Pancakes:
1 cup chickpea flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup milk (of your choice)
1/4 cup unsweetened applesauce
1 tablespoon maple syrup or honey
1 tablespoon melted butter or coconut oil
1 teaspoon vanilla extract
Preparation
In a mixing bowl, combine the chickpea flour, baking powder, cinnamon, and salt. Whisk until well combined.
In a separate bowl, whisk together the milk, unsweetened applesauce, maple syrup or honey, melted butter or coconut oil, and vanilla extract.
Gradually pour the wet ingredients into the dry ingredients, whisking until a smooth batter forms. Let the batter rest for 5-10 minutes to thicken.
Heat a lightly greased skillet or griddle over medium heat.
Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
Repeat with the remaining batter, adding more oil to the skillet as needed.
