Custard Oatmeal with Caramelized Apples

Ingredients

  • For the Custard Oatmeal:

    • 1 cup rolled oats

    • 2 cups milk (of your choice)

    • 2 large eggs

    • 2 tablespoons maple syrup

    • 1 teaspoon vanilla extract

    • A pinch of salt

    For the Caramelized Apples:

    • 2 apples, thinly sliced

    • 2 tablespoons butter or coconut oil

    • 2 tablespoons brown sugar

    • 1 teaspoon cinnamon

    • A splash of lemon juice

Preparation

  1. Prepare the Custard Oatmeal:

    • In a saucepan, combine the rolled oats and milk. Bring to a gentle simmer over medium heat, stirring occasionally.

    • In a separate bowl, whisk together the eggs, maple syrup, vanilla extract, and salt until well combined.

    • Once the oats are cooked to your desired consistency, slowly pour in the egg mixture while continuously stirring. Cook for an additional 2-3 minutes until the custard thickens. Remove from heat and set aside.

  2. Caramelize the Apples:

    • In a skillet, melt the butter or coconut oil over medium heat.

    • Add the thinly sliced apples to the skillet along with the brown sugar, cinnamon, and a splash of lemon juice. Stir to coat the apples evenly.

    • Cook the apples, stirring occasionally, until they are soft and caramelized, about 5-7 minutes. Remove from heat.


Divide the custard oatmeal into serving bowls and top with a generous spoonful of caramelized apples.


Optional: Drizzle with additional maple syrup or sprinkle with a dash of cinnamon for extra sweetness and flavor.


Enjoy immediately while warm and comforting!
