Practical strategies for stress reduction through food and lifestyle
Ingredients
For the Custard Oatmeal:
1 cup rolled oats
2 cups milk (of your choice)
2 large eggs
2 tablespoons maple syrup
1 teaspoon vanilla extract
A pinch of salt
For the Caramelized Apples:
2 apples, thinly sliced
2 tablespoons butter or coconut oil
2 tablespoons brown sugar
1 teaspoon cinnamon
A splash of lemon juice
Preparation
Prepare the Custard Oatmeal:
In a saucepan, combine the rolled oats and milk. Bring to a gentle simmer over medium heat, stirring occasionally.
In a separate bowl, whisk together the eggs, maple syrup, vanilla extract, and salt until well combined.
Once the oats are cooked to your desired consistency, slowly pour in the egg mixture while continuously stirring. Cook for an additional 2-3 minutes until the custard thickens. Remove from heat and set aside.
Caramelize the Apples:
In a skillet, melt the butter or coconut oil over medium heat.
Add the thinly sliced apples to the skillet along with the brown sugar, cinnamon, and a splash of lemon juice. Stir to coat the apples evenly.
Cook the apples, stirring occasionally, until they are soft and caramelized, about 5-7 minutes. Remove from heat.
Divide the custard oatmeal into serving bowls and top with a generous spoonful of caramelized apples.
Optional: Drizzle with additional maple syrup or sprinkle with a dash of cinnamon for extra sweetness and flavor.
Enjoy immediately while warm and comforting!
